Italian Sauce With Pine Nuts
We are going to do a pasta sauce which is an italian sauce with pine nuts in sixty seconds, and I am not joking this is perfect, perfect, perfect. When you have come in from a day at work and you literally do not want to cook but you want something nice, fresh, and tasty. It is sixty seconds, simple and easy.
Goat's cheese pine nuts and rocket. So, the pasta, always a bit of a debate in our family. What pasta to use? I have just gone for classic spaghetti. In theory a heavier pasta goes with a heavier sauce, a lighter pasta goes with a lighter sauce. So, like a thinner pasta, but you want good quality pasta that is the most important. Pine nuts; About a good two tablespoons. My pan is nice and hot. Toast these up a little bit
Is the pasta nearly done?
Never overcook your pasta. If that goes overcooked chuck it and start again. Add Nob of butter, Goat’s cheese.
Goat's cheese in and I am going to use a little bit of the pasta water. So, you want this goat’s cheese to form a bit of a cream, pop a bit more water in.
Pasta ready.
The pasta now will literally just go... Salt and pepper. And then rocket goes in right at the last minute. Rocket is a bit like spinach so it will start to wilt but there you go that is it. That is exactly how easy it is, and it smells. Pop a little goat cheese on top. Fabulous. And finally, a nice drizzle of rosemary olive oil. We like a good glug. The hardest part of this is waiting for the pasta to cook. The rosemary oil is good on it.
That sauce literally takes sixty seconds. Really simple, nice, and tasty...
